Ingredients

500g ground meat (beef or mixed)

1 onion

1 egg

2 tbsp breadcrumbs

1 tsp salt

1 tsp pepper

1 tsp paprika powder

1 tbsp olive oil

200g orzo (Greek rice-shaped pasta)

1 bell pepper

1 zucchini

200g tomatoes (fresh or canned)

1 tsp dried herbs (oregano, basil)

2 tbsp tomato paste

500ml vegetable broth

1 tbsp olive oil (for frying)


Instructions

  • Prepare the meatballs: Combine the ground meat, finely chopped onion, egg, breadcrumbs, salt, pepper, and paprika powder in a bowl. Shape the mixture into small balls.

  • In a large pan, heat olive oil and brown the meatballs on all sides until cooked through. Remove from the pan and set aside.

  • In the same pan, add more olive oil and sauté the diced bell pepper and zucchini until soft. Add the tomato paste, tomatoes, and herbs, then bring to a boil.

  • Add the orzo pasta and vegetable broth, simmering on medium heat until the orzo is al dente and the liquid is absorbed.

  • Return the meatballs to the pan and cook for a few more minutes, allowing the flavors to meld.

Notes

  • Feel free to swap the ground meat for chicken or lamb for different flavors.

  • Use seasonal vegetables like eggplant, pumpkin, or mushrooms for variation.

  • Add chili flakes or swap the paprika powder for hot paprika if you prefer a spicier dish.

  • For extra flavor, sprinkle grated Parmesan or Feta cheese on top before serving.
