2 tbsp breadcrumbs
1 tsp salt
1 tsp pepper
1 tsp paprika powder
1 tbsp olive oil
200g orzo (Greek rice-shaped pasta)
1 bell pepper
1 zucchini
200g tomatoes (fresh or canned)
1 tsp dried herbs (oregano, basil)
2 tbsp tomato paste
500ml vegetable broth
1 tbsp olive oil (for frying)
Instructions
-
Prepare the meatballs: Combine the ground meat, finely chopped onion, egg, breadcrumbs, salt, pepper, and paprika powder in a bowl. Shape the mixture into small balls.
-
In a large pan, heat olive oil and brown the meatballs on all sides until cooked through. Remove from the pan and set aside.
-
In the same pan, add more olive oil and sauté the diced bell pepper and zucchini until soft. Add the tomato paste, tomatoes, and herbs, then bring to a boil.
-
Add the orzo pasta and vegetable broth, simmering on medium heat until the orzo is al dente and the liquid is absorbed.
-
Return the meatballs to the pan and cook for a few more minutes, allowing the flavors to meld.
Notes
-
Feel free to swap the ground meat for chicken or lamb for different flavors.
-
